  • 1 cup butter - softened
  • 3 eggs
  • 1/2 tsp. baking soda
  • 1 tbs. grated lemon peel
  • 1 - 8oz. carton low fat yogurt - any flavor
  • 1 cup sugar
  • 2 1/4 cups flour
  • 1 tsp. vanilla
  • 1 cup chopped nuts



Step 1

Cream butter, gradually add sugar, beating until mixture is light and fluffy. Add eggs one at a time, beating well after each. Combine flour, soda, salt and add to creamed mixture, mixing well. Stir in lemon rind, yogurt, vanilla and nuts. Pour into greased and floured Bundt pan. Bake at 350 for 1 hour or until toothpick tests clean. Cool in pan on cake rack 15 min., remove from pan and cool completely. Dust with powdered sugar.
