Noodle Kugel

Ingredients

  • 1 pound wide egg noodles
  • 5 extra large eggs
  • 4 cups half and half
  • 1/4 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • 1/2 teaspoons cinnamon
  • 1 1/2 tablespoons salt
  • 1/2 teaspoons pepper
  • 1 cup ricotta cheese
  • 1 cup golden raisins

Preparation

Step 1

Preheat oven to 350* Butter a 10 x 13 baking dish

Cook the noodles for 6 to 8 minutes. Drain

In a large bowl, whisk together the eggs, half and half, sugar, vanilla, cinnamon and salt and pepper. Stir in the ricotta cheese and raisins. Add the noodles.

Bake in a Bain Maire, covered with alluminum foil for 45 minutes. Remove foil and bake another 45 minutes or until the custard is set.
