Cheesy Chicken Bake

Made with Reames noodles and fresh or canned chicken, makes a family meal and good leftovers.

Ingredients

  • 1 1 oz package 1 -12 oz package Reames Homestyle Noodles
  • 1-1/2 1-1/2 1-1/2 C lowfat cottage cheese
  • 2 2 2 C shredded lowfat cheddar cheese
  • 1/2 1/2 1/2 C grated parmesan cheese
  • 3 3 5 C cooked, diced chicken or two 5 oz cans (large cans) chunk white chicken
  • Sauce
  • 1 1 1 can Healthy Request cream of chicken soup
  • 1/3 1/3 1/3 C milk
  • 1/2 1/2 1/2 C each of chopped green pepper, onions (optional)
  • 6 6 can 6 oz can sliced mushrooms - drained
  • 1/2 1/2 1/2 tsp dried basil

Preparation

Step 1

1. Cook noodles according to package directions, drain. Preheat oven to 350.

2. While noodle are cooking - prepare sauce by sautéing peppers & onion if using. Stir in soup, milk, mushrooms, chicken & basil and heat until hot.

3. Place 1/2 the noodles in the bottom of a 9 x 13 baking dish. Cover with 1/2 the chicken sauce and cheeses. Add remaining noodles, cheeses and sauce

4. Bake at 350 - covered with foil for 45 minutes or until bubbly & hot.
