    Apple Shredded

    c. Raisins

  • 1/2

    c. Walnuts

  • 1/2

    c. Coconut

  • 1

    can Crushed Pineapple

  • 1

    c. Oil

  • 1

    t. Vanilla

Directions

Preheat oven to 350. Sift or whisk dry ingredients together. Stir in carrots, apples, coconut, raisins, nuts and . Whisk together eggs, oil and vanilla in a seperate bowl. Pour into dry ingredients and blend. Spoon the batter into the prepared muffin cups filling them almost to the top. Bake about 35 minutes and until wooden pick inserted into center comes out clean. Cool 10 minutes. Best when allowed to ripen for 24 hours.
