Cookies/ Grapefruit w/ Icing (Anne's Friend)

YIELD: 20 cookies if you double the recipe.
Be sure to sift the powdered sugar or the glaze will be lumpy.
Put glaze on when cookies are cool.

Ingredients

  • 3/4 C butter (room temperature)
  • 1/2 C sugar
  • 1 TSP vanilla
  • 1/4 C grapefruit juice
  • 1 TBSP grapefruit zest
  • 1 3/4 C flour
  • 1 TBSP cornstarch
  • 1/2 TSP Baking Powder
  • 1/4 TSP salt

Preparation

Step 1

Cream butter and sugar together. Add vanilla, grapefruit juice, zest.
In another bowl mix flour, cornstarch, BP, and salt. Then stir this into butter, sugar, grapefruit mix.
Put dough into middle of parchment paper and roll it into a log, about a foot long. Wrap paper around it and sort of whack each side on the counter so you end up with a square or rectangular cookie shape. Put the log into the freezer for a couple of hours or overnight.
When you take the log out of the freezer, heat the oven to 350 degrees. Slice the log into half inch slices. Put them on parchment paper covered cookie sheets. Bake 12-15 min, until edges are a bit browned.
GLAZE: 2 Cups powdered sugar, 2-4 TBSP grapefruit juice, 1/2 TSP vanilla. Mix the ingredients together until the glaze isn't too thin--it should fall from the fork in ribbon like sheets. IF it is too thin, add some sugar; if too thick add a little more juice. Spoon a little bit on each cookie and spread it out. Then you can sprinkle little sprinkles on top if you want or shred a little citrus zest and add that.
