Pear Clafouti

This dessert is like a giant custard based pancake. You can add any fruit you like, but just make sure you try to match the liquer with the fruit.

Ingredients
- 1 tablespoon butter, room temp
- 1/3 cup sugar
- 3 extra large eggs, room temp
- 6 tablespoons flour
- 1 1/2 cups cream
- 2 teaspoons vanilla extract
- 1 teaspoon grated lemon zest (2 lemons)
- 2 tablespoons pear brandy, such as Poire William
- 2 to 3 bartlett pears
Preparation
Step 1
Preheat oven to 375* Butter a 10" round baking dish and sprinkle the bottom with sugar.
Beat the eggs and the 1/3 cup sugar in the bowl of mixer on medium high speed until light and fluffy, about 3 minutes. On low speed, mix in the flour, cream, vanilla, lemon zest, and pear brandy. Set aside for 10 minutes.
Meanwhile, peel, quarter, core and slice the pears. Arrange the slices in a single layer, slightly fanned out, in the baking dish. Pour the batter over the pears and bake until the top si golden brown, 35 to 40 minutes. Sprinle with confectioners' sugar.
