Baby Bell Peppers with Feta and Mint

Ingredients

  • 1 lb baby bell peppers
  • 3 tbsp olive oil
  • Salt
  • Red pepper flakes
  • Mint
  • 1/2 lemon, juiced
  • Feta

Preparation

Step 1

Preheat a grill to high. Toss peppers with 2 tbsp olive oil. Season with salt and red pepper flakes. Grill, turning until blistered, about 10 mins. Transfer to a bowl and toss with 1 tbsp olive oil, chopped mint, juice of 1/2 lemon and feta.
