Cowboy Beans

Ingredients

  • 2 oz. chorizo
  • 1/2 diced onion
  • 1/2 diced jalapeno
  • 1 tsp dried oregano
  • 1 tsp chili powder
  • 1 tsp minced garlic
  • 1 chopped tomato
  • 1 15 oz. can pinto beans
  • 3/4 c water
  • Salt
  • Pepper
  • Hot sauce

Preparation

Step 1

Heat olive oil in skillet. Brown the chorizo. Add the onion and cook 4 mins. Add jalapeno, oregano, chili powder, garlic and tomato. Cook 1 min.

Add the beans and water. Simmer 15 mins. Season with salt, pepper and hot sauce.
