Beef and Mushroom Stew

This is a very hearty stew that is filled with a lot of wonderful flavors.
Ingredients
- 1 1/2 lbs beef stew meat
- 1 cup chopped onion
- 2 Tbsp all-purpose flour
- 1/4 tsp salt
- 1/4 tsp black pepper
- 3 cups Cremini OR Button mushrooms, halved
- 14 oz. can chicken broth
- 3 Tbsp orange juice
- 1 tsp dried basil
- 1/2 tsp dried thyme
- 3 cloves garlic, minced
- 14 1/2 oz. can Del Monte Diced Tomatoes with Basil, Garlic, and Oregano
- Parsley sprigs (optional)

Step 1
Trim the fat from the beef and cut into 1" cubes. Spray non-stick cooking spray onto a large non-stick skillet and cook over MEDIUM-HIGH heat. Add the beef and onion and saute for 5 minutes. Combine the flour, salt, and pepper; Sprinkle over the beef mixture. Cook the beef for 1 minute, stirring constantly. Add mushrooms, chicken broth, orange juice, basil, thyme, garlic, and diced tomatoes; Bring the stew to a boil. Reduce heat to a SIMMER and cook, uncovered, for 40 minutes or until the beef is tender, stirring occasionally. If desired, garnish with parsley.
