lemon pasta with shrimp

  • 2 lbs - 17 to 21 count- shrimp, peeled and deveined
  • evoo
  • kosher salt and freshly ground pepper
  • 1 lb angel hair pasta
  • 4 tbsp unsalt butter- melted
  • zest and jc of 2 lemons

Step 1

preheat oven to 400 degrees. place the shrimp on a sheet pan with 1 tsp evoo 1/2 tsp saltand 1/2 teaspoon pepper. toss well, spread them in one layer and roast 6-8 minutes, just until they are pick and cooked through
meanwhile, drizzle some evoo in a large pot of boiling water, add the angel hair pasta and cook until al dente, about 3 minutes. drain the pasta, reserving some of the cooking liquid. quickley toss the pasta with the melted butter, 1/4 cup evoo, lemon zest , lemon jc, 2 tsp salt, 1 tsp pepper and about 1/2 cup reserved liquid. add the shrimp and serve hot
