Sausage Scramble

Idea for leftover mashed potatoes

Ingredients

• 8 oz. sausage
• 1 red pepper (chopped)
• 1 small onion (chopped)
• 1/8 tsp. pepper
• 2 c potatoes

Preparation

Step 1

In skillet brown sausage and transfer to small bowl when cooked through. Add to skillet the red pepper, onion, and pepper. Cover and cook 5 minutes or until crisp-tender. Add potatoes. Cook 5-7 minutes or until potatoes are hot, stirring often. Stir in sausage and serve.
