Ingredients

  • Cookie Crust:
  • 2 eggs
  • 2 cups brown sugar
  • 3/4 cup shortening
  • 1 tsp Cream of Tartar
  • 1/2 tsp baking soda
  • 3 cups flour
  • 1 tsp vanilla
  • 1/2 tsp salt
  • Filling:
  • 1 1/2 cups dates, chopped
  • 1 1/2 cups walnuts
  • 3/4 cups brown sugar
  • 3/4 cup water

Step 1

For the Crust: Mix together the ingredients in the order shown and roll out the dough into rectangular sheets on wax paper.

For the Filling: Combine the dates, brown sugar, and water in a pan and cook until the mixture thickens. Add the nuts and mix well. Gently spread the warm filling on the crust sheets.

Carefully roll the sheets using the wax paper, removing the wax paper as it is rolled. Rewrap the cookies in wax paper and chill for 1 hour in the refrigerator.

Take the rolls out of the fridge, *one at a time*, and slice 1/4"-1/2" wafers. Place the wafers onto a cookie sheet and continue until all of the rolls are sliced and placed onto cookie sheets. Bake at 350 degrees Fahrenheit for 15 - 20 minutes. Remove the cookies from the oven and cool. Enjoy!!
