Chicken: Oven Fried

This isn't my original fried chicken that I learned to make from my mother, but it's really good and the crust is incredibly crispy.

Ingredients

  • 6 pounds of chicken
  • 1 quart buttermilk
  • 2 cups flour
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • Vegetable oil or shortening

Preparation

Step 1

Place chicken in large bowl and cover with buttermilk. Cover with plastic wrap and refrigerate over night or all day.

Preheat oven 350*

Combine flour, salt and pepper. Take the chicken out of the buttermilk and coat with flour. Pour oil into large pot to the depth of 1 inch and heat to 360*.

Working in batches, fry the chicken until lightly golden.
Place on a wire rack on a cookie sheet lined with aluminum foil. Bake in the oven for 30 to 40 minutes.
