Ingredients

  • 1 pkg 2 layer size spice cake mix
  • 2 c shredded carrots
  • 1 can crushed pineapple, drained
  • 1 c chopped pecans
  • 1 pkgs cream cheese, softened
  • 2 c powdered sugar
  • 1 tub cool whip, thawed

Preparation

Step 1

preheat over to 350
prepare cake mix batter as directed, add carrots, pineapple and 3/4 c of the pecans until well blended.
pour into 2 9" baking pans.
bake 25 to 30 min until toothpick comes out clean.
beat cream cheese and sugar until blended and stir in cool whip.

place 1 layer on serving plate and frost, carefully pace 2nd layer on top & frost all, garnish with 1/4 c pecans, refrigerate
