French Onion Soup

Ingredients
- 4 Vidalia onions, sliced 1/4" thick
- 2 cloves garlic chopped
- 4 sprigs thyme
- 1 bay leaf
- 1 Tbsp unsalted butter
- 2 Quarts white chicken stock
- 3/4 Cup white wine
- 1/4 cup sherry wine
- 6 slices country bread
- 2 cups gruyere cheese
- 1 cup Emmenthaler cheese
- 1 cup sliced shredded mozzarella

Preparation
Step 1
Heat sauce pot with olive oil, add onions and garlic. Stir constantly until deep golden brown, about 30 minutes. Add butter, thyme, bay leaf. Deglaze with white wine and sherry. Reduce by half and add chicken stock. Remove thyme and bay leaf and season with salt and pepper. cook for 45 minutes to 1 hour. Let simmer.
Ladle soup into oven proof bowls and add country bread. Sprinkle 1/3 cup cheese mix. In a pre-heated oven or broiler cook until golden brown.
