Ingredients
- 6 chicken breasts, bone in, skin on
- olive oil
- salt and pepper
- 1 1/2 cups good mayonnaise
- 1/3 cup dry white wine
- 1/4 cup Major Grey's chutney
- 3 tablespoon curry powder
- 1 cup medium diced celery (2 large stalks)
- 1/4 cup chopped scallions, (about 2)
- 1/4 cup golden raisins
- 1 cup whole roasted, slated cashews.
Preparation
Step 1
Preheat oven 350*
Roast chicken covered in olive oil and seasoned with salt and pepper for about 35 to 40 minutes.
Remove skin and bones and dice chicken
Dressing:
Combine mayo, wine, chutney curry powder in food processor with 1 1/2 teapsoons salt.
Combine the chicken with enough dressing to moisten. Add the celery, scallions and raisins and mix well. Fridge for a few hours. Add the cashews and serve at room temp.
