Ingredients

  • 1 lb. stew meat, cut in 1" cubes
  • all purpose flour
  • vegetable oil
  • 2 1/2 c. boiling water
  • 2 T. chopped onion
  • 1/2 clove garlic
  • 1 1/2 t. salt
  • 1/4 t. pepper
  • 1/4 t. paprika
  • dash allspice
  • 1 bay leaf
  • 1/2 t. summer savory
  • 1 t. sugar
  • 1/2 t. lemon juice
  • 1/2 t. worcestershire sauce
  • 1/4 c. tomato juice
  • 1/2 c. sliced carrots
  • 1/2 c. diced celery
  • 1 c. pearl onions
  • 1 c. peeled and cubed potatoes

Preparation

Step 1

Dredge beef cubes in flour and brown in hot vegetable oil in large heavy kettle, preferable cast iron. Add boiling water, onion, garlic, salt, pepper, spices, herbs, sugar, lemon juice, worcestershire sauce, and tomato juice. Cover tightly and simmer 2 hours. Add more water if needed.

Add vegetables and cook 30 minutes more. Remove bay leaf before serving.
