Chocolate Marshmallow Raspberry Parfaits

These chocolate marshmallow raspberry parfaits are light, fluffy and packed with flavor. Just like a chocolate dipped raspberry with a creamy filling.
Serve this light and tasty dessert with your Valentine’s Day dinner. After a big heavy meal it’s nice to have a light dessert.

Ingredients
- For the Chocolate Layer:
- 2 (8 ounce) Cool Whip
- 3.9 ounce chocolate fudge pudding mix
- For the Marshmallow Layer:
- 7 ounce jar marshmallow fluff
- 1/2 cup butter, softened
- 1 cup confectioners sugar
- 1/2 teaspoon vanilla extract
- plus (optional) 1 vanilla bean, scrap out seeds
- 1 cup mini marshmallows
- For the Raspberry Layer:
- 8 ounce Cool Whip
- 6 ounce box raspberry gelatin
Preparation
Step 1
For the Chocolate Layer:
In a large bowl mix together the cool whip and pudding mix until well combined.
Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag.
For the Marshmallow Layer:
Beat together the marshmallow cream, butter, sugar and vanilla until fluffy.
Fold in marshmallows.
Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag big enough to allow the marshmallows to pass through.
For the Raspberry Layer:
In a medium bowl mix together the Cool Whip and raspberry gelatin until well combined.
Scoop filling into a zip top bag, seal tight, and snip off a corner of the bag.
To Put It All Together:
In a 8 ounce clear container; add layers.
Starting with the chocolate then the marshmallow ending with the raspberry.
Optional: Sprinkle with hearts.
Cover with plastic wrap and store in the refrigerator until ready to serve.
