Tomatoes: Provencal

Ingredients

  • 6 ripe tomatoes
  • 1 1/2 cups white bread crumbs
  • 1/4 cups minced scallions
  • 1/4 cup minced fresh basil leaves
  • 2 tablespoons flat leaf parsley
  • 2 teaspoons minced garlic
  • 1/2 teaspoon minced fresh thyme leaves
  • salt and pepper
  • 1/2 cup grated gruyere cheese

Preparation

Step 1

Preheat oven to 400*

Hollow out the tomatoes.

In a bowl, combine the bread crumbs, scallions, basil, parsley and garlic, thyme and 1 teaspoon salt. Sprinkle the tomatoes with salt and pepper. fill the cavities and cover the tops with the bread crumb mixture. Bake the tomatoes for 15 minutes or until tender. Sprinkle with cheese and drizzle with olive oil, and bake for another minute.
