Cookies: Shortbread

My husband was in a trial in the west coast of Florida and would be away for up to 10 days. I really wanted him to have something from my kitchen to take with him on his trip, so I made these cookies. Everynight he would have a cookie or two for dessert and then call me to say goodnight and brag about how much he loved those cookies.

Ingredients

  • Glaze:
  • 3/4 pound butter, soft
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 1/2 cups all purpose flour
  • 1 cup confectioners' sugar

Preparation

Step 1

Mix the butter and sugar until just combined. Add the vanilla. In another bowl, sift flour and then add it to the butter and sugar mixture. Mix the dough until it comes together. Dump on a floured board and shape into a flat disk. Wrap in plastic and chill for 30 minutes.

Preheat oven 350*

Roll out dough to 1/2" thick and cut with a 3" round cutter. Place on ungreased cookie sheets and bake for 20 to 25 minutes.

Combine the confectioners' sugar with about 2 tablespoons of water to make a very thin glaze. Spoon over cookies and decorate with dragees for anything you like.
