Ingredients
- 1 lb. chicken breasts
- 2 T. Flour
- 1/4 tsp. salt
- 2 tsp. olive oil
- 3/4 c. chicken broth
- 1/4 c. lemon juice
- 2 tsp. cornstarch
- 2 tsp. butter
- 2 tsp. capers

Step 1
Coat 4 chicken cutlets (about 1 lb) in a mixture of 2 Tbls. flour and 1/4 tsp salt in a baggie. Shake.
Heat 2 tsp olive oil in saute pan. Add chicken and cook, turning once about 5 minutes per side. Remove to a serving plate.
In a measuring cup, combine 3/4 cup chicken broth, 1/4 lemon juice, and 2 tsp. cornstarch. Add to skillet and whisk with pan drippings. Simmer 1 minute till thickened. Remove from heat. Stir in 2 tsp. butter and 2 tsp. capers. Spoon over chicken!
