Ingredients

  • 2 cups of rice Chex.
  • 3/4 cup chopped walnuts
  • 2 Tablespoons brown sugar
  • 1 Tablespoon butter, melted
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup butter
  • 1 cup mashed ripe bananas
  • 1/2 cup buttermilk
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda

Preparation

Step 1

Crush cereal with rolling pin to make one cup of crumbs. Combine 1/4 cup of crumbs, 1/4 cup walnuts, brown sugar and 1 tablespoon melted butter. SetAside

Cream 1/2 cup butter & sugar until fluffy.
Add egg, banana, and buttermilk. Mix well

Stir together flourish, baking powder, baking soda and 1/2 tsp salt.

Add to creamed mixture, mix well,

Fold in cereal crumbs & nuts

Turn into greased 9 x 5 x 3" loaf pan, sprinkle reserved crumbs on top

Bake 350. For 55 to 60 min. Cool 10 mim remove from pan, Enjoy.
