Marinated Linguine

Great in place of potato salad for a summer pot luck. Must be prepared ahead of time.

Ingredients

  • 1 lb. linguine (or green noodles)
  • 6 T white wine vinegar
  • 14 T olive or vegetable oil (about 2/3 C)
  • 4 T fresh parsley, chopped
  • 2 t basil
  • 1/4 t black pepper
  • 1 t salt
  • 1/2 t dry mustard
  • 1/2 lb. fresh mushrooms, sliced
  • 1/2 C scallions with tops, chopped
  • 1/2 C Parmesan cheese, grated
  • 1 clove garlic, crushed

Preparation

Step 1

Cook linguine according to package directions. Drain and rinse in cold water.

Mix all other ingredients together and add linguine. Toss until mixed thoroughly. Chill for 24 hours.
