Marinated Linguine

Great in place of potato salad for a summer pot luck. Must be prepared ahead of time.

Ingredients
- 1 lb. linguine (or green noodles)
- 6 T white wine vinegar
- 14 T olive or vegetable oil (about 2/3 C)
- 4 T fresh parsley, chopped
- 2 t basil
- 1/4 t black pepper
- 1 t salt
- 1/2 t dry mustard
- 1/2 lb. fresh mushrooms, sliced
- 1/2 C scallions with tops, chopped
- 1/2 C Parmesan cheese, grated
- 1 clove garlic, crushed

Preparation
Step 1
Cook linguine according to package directions. Drain and rinse in cold water.
Mix all other ingredients together and add linguine. Toss until mixed thoroughly. Chill for 24 hours.
