Another SUN recipe from Christmas time. These were developed by a grandmother to give to her grandchildren as a hearty snack before bedtime. They have whole wheat and fruit to make them a bit healthier.

Ingredients

  • 1 c. butter
  • 1/2 c. packed dark brown sugar
  • 2 eggs
  • 2 tsp. maple flavoring
  • 1.5 c. whole wheat flour, sifted
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. prunes plus 3 tbs. hot water ( processed into prune butter in a food processor)
  • 3 c. oats
  • 1 c. raisins
  • 1 c. dried apricots, chopped in a food processor
  • 1 c. chopped dates
  • 1 c. chocolate chips

Preparation

Step 1

Cream butter with sugar, add eggs and maple flavor. Mix in sifted flour, baking soda and salt. Add prune butter until blended, then add oats and blend. Mix in final 7 ingredients. Refrigerate at least a few hours or overnight.

Preheat oven to 350. Use cookie scooper to shape into balls. Place cookie balls 2 inches apart on cookie sheet that is lined with parchment paper. Press down balls with palm of hand. Bake 12 minutes. Stack baked cookies in layers with waxed paper in between.
