Sweet Potato Biscuits

Ingredients

  • 2 medium sized sweet potatoes - baked, peeled and mashed
  • 1/4 cup packed brown sugar
  • 3 cups flour
  • 1 1/2 tbsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 cup milk
  • 1/2 tsp. ground mace
  • 1 tsp. grated lemon rind
  • 1 cup unsalted soft butter

Step 1

Preheat oven to 450 degrees.
In a blender puree the sweet potatoes and the brown sugar until smooth.
In a bowl, sift together the flour, baking powder, salt and spices. Add the lemon rind.
Cut in the butter with a pastry blender until crumbly. Add the sweet potato puree and the milk until it is blended. gather the dough into a ball, turn out onto a lightly floured surface and knead 3 or 4 times ( Do not overwork the dough). Flatten dough to a thickness of 3/4 inches. Cut out the biscuits using a 3 inch round dipped in flour. Prick the top of the biscuits 2 or 3 times with a fork. Place 1/2 inch apart on an ungreased baking sheet.
Bake 12 to 15 minutes or until golden brown.
16 - 3 inch biscuits.
Split and put Smith field Ham inside and serve warm.
