Ingredients

  • 6 oz dried extra wide egg noodles
  • 1 rotisserie chicken
  • 1 cup frozen peas
  • 4 cloves garlic, minced
  • 1 3/4 cups whole milk, half & half, or light cream
  • 1/2 slice white or wheat bread
  • 3/4 cup shredded Parmesan cheese
  • 2 Tbls butter, melted

Step 1

Preheat oven to 450. In a dutch oven bring 6 cups salted water to boil, add noodles. Cook for 10 minutes or until tender, drain.
Meanwhile, remove chicken from bones. Discard skin and bones. Shred chicken with 2 forks. In a large saucepan, combine shredded chicken, peas and garlic. Stir in milk, heat through. Cover & keep warm.
Place bread in blender or food processor, cover and blend or process until in coarse crumbs. Transfer to a small bowl, add 1/4 cup of the Parmesan cheese. and the melted butter.
Stir in cooked noodles and the remaining 1/2 cup Parmesan cheese into hot chicken mixture. Cook and stir until bubbly. Place in casserole dish and top with some of the bread crumb mixture. Bake about 5 minutes or until top begins to brown.
