Problem: Lumpy Gravy

Problem: Last year the gravy was full of lumps. The antidote is found in the supermarket, in a package marked "Wondra," says Sam Sifton, author of 'Thanksgiving: How to Cook it Well." This finely milled flour dissolves more easily in liquid than all-purpose varieties do, creating a smooth sauce. Does the flavor need a little more oomph? Dash food editor Rosemary Black recommends adding a splash of balsamic vinegar or Madeira to bland gravy.
