Cowboy Casserole
A quick and easy tater tot casserole. Probably my favorite guilty pleasure.

Ingredients
- 1 1/2 pounds ground beef
- 1 medium onion, chopped
- 3 cloves garlic, chopped
- 1 can (15.25oz) whole kernel corn, drained
- 1 can condensed cream of mushroom soup
- 2 cups cheddar cheese, shredded
- 1/2 cup milk
- 4 tablespoons sour cream
- 1 bag (30 oz) frozen tater tots

Preparation
Step 1
001] In a large skillet, cook onion until translucent, add chopped garlic and cook for one minute, then add beef over medium heat until no longer pink.
002] Stir in the corn, soup, milk, 1 cup of the cheese and sour cream.
003] Grease a 9x13 inch casserole dish.
004] Cover bottom of casserole dish with one layer of tater tots.
005] Layer with beef mixture.
006] Cover the top of the beef mixture with a layer of tater tots.
007] Sprinkle the remaining cheese on top.
008] Bake, uncovered at 350° for 25 - 30 minutes.
