Ingredients

  • 2 tbsp Fish sauce (2X)
  • 2 tbsp fresh lime juice
  • 1 1/2 tbsp sugar
  • 1 Thai chile or serrano
  • 1 lb ground chicken, perferred thighs or grind thru small plate
  • 1/2 c minced shallot
  • 1/4 c Oyster sauce
  • 1 tbsp AP flour
  • 1 clove garlic, minced
  • 1 head Boston Lettuce

Preparation

Step 1

Dippings sauce:
Combine 2 tbsp fish sauce, lime juice, sugar, 1/2 chile and 2 tbsp of water. Whisk to blend.

Marinade:
Combine 2 tbsp fish sauce, remaining chile, chicken, shallots, oyster sauce, flour and garlic. Mix well and form in to patties or leave loose. Cook until done, wrap chicken patties/loose into lettuce and top with dipping sauce.
