Ingredients

  • Honey Glaze:
  • 1 c. confectioners sugar
  • 2 T. honey
  • 2 T. milk
  • Cake:
  • 3 c. diced Granny Smith apples, about 2 apples
  • 1 c. lightly toasted walnuts (optional)
  • 2 t. vanilla
  • 2 t. cinnamon
  • 3 c. flour
  • 2 c. sugar
  • 1 1/4 c. vegetable oil
  • 3 eggs
  • 1 t. salt

Preparation

Step 1

Preheat over to 325 degrees. Lightly grease a Bundt or tube pan.

1. Mix together the apples, walnuts, vanilla and cinnamon. In a separate bowl, sift together the flour, baking soda and salt.

2. Using an electric mixer beat the sugar, oil and eggs in large bowl.
Add dry ingredients and beat until completely combined. Fold in apple mixture.

3. Scrape the batter into the prepared pan and bake 1 hr. 30 minutes or until a toothpick inserted into the middle of the cake comes out clean.

4. Allow cake to fully cool in the pan, about 1 hr., then turn out onto a plate.

5. Drizzle the apple cake with some of the honey glaze, serve & enjoy.

This cake can be wrapped tightly and stored in the refrigerator for 3-5 days.
