Beer Soup

Ingredients

  • 1 1/2 cups shallots, chopped
  • 1 garlic clove, finely chopped
  • 3 tablespoons butter
  • 1 cup beer
  • 3 cups chicken stock
  • 1 bay leaf
  • 2 tablespoons honey
  • 1 cup day-old French bread, chopped and packed
  • salt and pepper

Preparation

Step 1

1 In a saucepan, soften the shallots and garlic in butter. 2 Add remaining ingredients. 3 Cover and let simmer 20 minutes. 4 Remove bay leaf. 5 Reduce the soup in puree in blender. Add salt and pepper.

Note:
Ok to use onions (sweet white). Used hamburger bun and Bud Light Wheat. Wheat beer flavor great with honey. Cooked with salt & pepper, then topped each bowl with dash of freshly cracked black pepper. Would be good for dinner party.
