Buttery Garlic Herb Sweet Potatoes

    lbs sweet potatoes, peeled and sliced ¼ inch thick

  • 2

    tbs each EVOO and Balsamic vinegar

  • tsp honey

  • 1

    tsp sea salt or to taste

  • ¼

    cup butter

  • ½

    tbs each chopped fresh basil, thyme, rosemary, and parsley

  • 4

    cloves garlic, minced

  • Freshly ground pepper to taste


1. Preheat oven to 450 degree and line 2 large baking sheets with parchment paper. Toss sweet potatoes with oil, vinegar and honey and place in a single layer on baking sheets; sprinkle with salt. 2. Cook for 10 minutes, then turn and cook for 10 mins more or until tender. 3. While potatoes are cooking, melt butter with herbs, garlic and pepper. Place cooked potatoes in large bowl and toss with herb butter
