It's really just chicken rigatoni and broccoli, but my lovely wife called it this one time and it stuck :)

Ingredients

  • 2 lb Chicken breast or tenderloins
  • 2-3 lb Broccoli crowns
  • 1 cup fresh Garlic, minced (usually ends up being a 1-1.5 heads of garlic)
  • 1 box Rigatoni
  • 1 tbsp butter or substitute
  • Olive oil
  • 1-2 cups Parmesan cheese, fresh or store bought (I have found that the Kraft Parm cheese gives a good taste but will make the whole dish drier than freshly grated, really depends on taste)
  • Large skillet w/ cover
  • pot to cook pasta

Step 1

Prep

Cut chicken into small pieces, typically 1/2 to 3/4" squares
mince garlic
combine chicken and garlic in large bowl
cut broccoli into pieces

Cooking

heat a large skillet with olive oil on med-high heat, once up to temp add chicken and garlic

simmer until chicken is cooked most of the way through and garlic has reduced

add broccoli on top of chicken and cover, reduce heat to med

cook until broccoli is tender, stirring occasionally to mix olive oil and garlic together with the broccoli and chicken

add 1/2-1 cup cheese to skillet, mix thoroughly

cook pasta until just before al dente
drain water and return pasta to pot
add 1 butter to pot and mix thoroughly until pasta is coated, sprinkle cheese and mix again

combine pasta and chicken, etc. in either the skillet or pot and allow to sit, i usually let it sit for 15-20 minutes

top off individual servings with remaining cheese, enjoy
