Spanish Rice and Beef Soup

  • 1 lb. beef cubed steaks
  • 2 Tbs. butter
  • 1 clove garlic crushed
  • I 6.8 oz. pkg. Spanish rice mix
  • 1 -14 1/2oz. can chili-seasoned diced tomatoes, untrained
  • 5 c. water

Step 1

Cut beef steaks lengthwise into l-inch wide strips and then crosswise into linch pieces.
Heat butter until melted. Add beef and garlic; stir-fry 2-3 min or until outside surface of beef is
no longer pink. Remove from pan; season with 2 tsp. seasoning mix from rice mix.
In same pan, combine rice mix and remaining seasoning mixture, water and tomatoes; bring to a
boil. Reduce heat to medium low; cover tightly and simmer 15-17 min or until rice is tender.
Return beef to soup. Cook 5 min. more
