Vegetable Pasta Sauce - Crock Pot

Ingredients

  • 2 cans (14oz) diced tomatoes
  • 1 can (14oz) whole tomatoes
  • 1 1/2 cup sliced mushrooms
  • 1 red bell pepper, diced
  • 1 green pepper, diced
  • 1 small yellow zucchini, cut into 1/4-inch slices
  • 1 small green zucchini, cut into 1/4 inch slices
  • 1 can (6oz) tomato paste
  • 4 green onions, sliced
  • 2 Tbsp. Italian seasoning
  • 1 Tbsp. fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1 tsp. salt
  • 1 tsp. red pepper flakes
  • 1 tsp. black pepper
  • hot cooked pasta
  • parmesan cheese and fresh basil

Preparation

Step 1

Combine all ingredient except pasta, cheese and basil in crock pot, mix well.

Cover; cook on low 6 to 8 hours.

Serve sauce over pasta; top with cheese and basil.
