Ingredients

  • 3 eggs
  • 1 c sugar
  • 2/3 c pumpkin
  • 1 t lemon juice
  • 3/4 c flour
  • 1 t baking powder
  • 2 t cinnamon
  • 1 t ginger
  • 1/2 t nutmeg
  • 1 c chopped walnuts-optional
  • powdered sugar
  • filling
  • 2 T butter
  • pkg cream cheese
  • 3/4 t vanilla
  • 1 c powdered sugar

Preparation

Step 1

beat egg, about 5 min.
slowly add sugar. add pumpkin, lemon juice, flour, baking powder and spices.

grease cookie sheet, cover with wax paper, and grease wax paper

spread mixture, sprinkle with nuts & bake at 350 for 15 to 20 minutes

sprinkle towel with powdered sugar
remove cake from pan & roll cake with towel while warm.
refrigerate until cool.

mix filling ingredients, unroll cake & spread on, re-roll & keep refrigerated.
