Berry Sorbet

Ingredients

  • 3 cups berries (use only 2-1/2 cups if using just blueberries)
  • 1 cup sugar
  • Pinch salt
  • 1/2 cup water
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon vodka or berry liqueur (optional)

Preparation

Step 1

Pulse the fruit, sugar, and salt together in a food processor until combined, about 15 pulses. With the machine running, pour the remaining ingredients through the feed tube and continue to process until the sugar is dissolved, about 1 minute. Strain the mixture into a large bowl and refrigerate until completely chilled, about 1 hour.

Pour the chilled mixture into the ice cream machine canister and churn, following the manufacturer's instructions, until the mixture resembles soft serve ice cream. Transfer the sorbet to an airtight container and press plastic wrap flush against the surface. Cover the container and freeze the sorbet until firm, about 3 hours.

Lemon or Lime Sorbet

1-1/4 cups sugar
2 teaspoons grated lemon (or lime) zest

1-1/2 cups water
1/2 cup fresh lemon (or lime) juice (3 lemons or 5 limes)
1 tablespoon vodka (optional)

Orange Sorbet

1 cup minus 1 tablespoon sugar
2 teaspoons grated orange zest

2 cups fresh orange juice (6 oranges)
1 tablespoon fresh lemon juice
1 tablespoon vodka or orange liqueur (optional)

Grapefruit Sorbet

1 cup plus 1 tablespoon sugar
2 teaspoons grated grapefruit zest
Pinch salt
1-1/2 cups fresh grapefruit juice (3 grapefruits)
1/2 cup water
1 tablespoon vodka (optional)

Peach Sorbet

2-1/2 pounds peaches (6 to 8) peeled and chopped coarse
1 cup minus 1 tablespoon sugar
Pinch salt
1/2 cup water
2 tablespoons fresh lemon juice
1 tablespoon vodka, rum or peach schnapps (optional)

Mango Sorbet

3 mangoes (3 pounds) peeled, chopped coarse
3/4 cup plus 1 tablespoon sugar
Pinch salt
1/2 cup water
2 tablespoons fresh lemon juice
1 tablespoon vodka (optional)

Pineapple Sorbet

1 small pineapple (3 pounds), cored, and chopped coarse
3/4 cup sugar
Pinch salt
1 tablespoon fresh lemon juice
1 tablespoon vodka or rum (optional)

Melon Sorbet

2-1/2 pounds melon, peeled, seeded, chopped coarse (4 cups)
1 cup minus 1 tablespoon sugar
Pinch salt
3 tablespoons fresh lemon juice
1 tablespoon vodka (optional)
