Ingredients

  • Cake:
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp soda
  • 1 1/2 cup oil
  • 4 eggs
  • 3 cups grated carrots
  • Frosting:
  • 4 oz cream cheese
  • 1/4 (or less) whipping cream
  • 1 tsp(+) vanilla
  • 2 1/2 - 3 1/2 cups confectioner sugar

Preparation

Step 1

Preheat oven to 350 degrees.
Peel and grate carrots.
In large mixing bowl, add flour, sugar salt, cinnamon and soda. Add oil, eggs, and carrots.
Grease pan, bake for ~1 hour and 20 minutes.

While baking, in small bowl whip cream. Add softened cream cheese, vanilla, and confectioners sugar to desired thickness.

Add frosting to cake after cooled.
