VEGETABLE BEEF NOODLE SOUP

Ingredients

  • 1 lb stewing beef
  • 1/2 tsp pepper
  • 1/4 tsp salt
  • 1 tbsp vegetable oil
  • 3 chopped carrots
  • 2 ribs of chopped celery
  • 1 chopped onion
  • 3 cloves of minced garlic
  • 1 900 ml jar of beef broth
  • 2 tbsp tomatoe paste
  • 1 tsp herbes de Provence
  • 1/2 tsp red wine vinegar
  • 1 cup egg noodles
  • 1/2 cup frozen peas
  • 3 cups spinach

Preparation

Step 1

Cut beef into bite size pieces. Dry very well with paper towel. Sprinkle with salt and pepper. Heat oil and cook beef till browned - about 6 minutes. Stir in carrots, celery, onions and garlic. Cook till softened about 6 minutes. Stir in broth and 3 cups of water. Add tomatoe paste, herbes and vinegar. Bring to boil and reduce heat to a simmer for 2 hours. Stir in noodles and peas. Cook 5 minutes. Add spinach and serve.
