Habanero Fruit Sauce

You can mix this in butter and refridgerate. Use on hot bread, crackers, or on fishes and meats. Great Lobster dipper.
Ingredients
- 3 c. Habaneros, seeded and chopped
- 2 ripe mangos peeled and diced
- 1 ripe papaya peeled and dice
- 1 c. fresh pineapple peeled diced and packed
- 1 c. cider vinegar
- 1/2 c. rum (light or dark)
- 1/4 c. triple sec
- 1 c. fresh lime juice
- 2 c. sugar
- 1 t. salt
- 1 t. fresh ground black pepper
- 2 t. lime rind, grated
Preparation

Wash and dry peppers before cutting and seeding to decrease fumes
Do not run water over them after cutting
Use gloves
Do not touch face and eyes
Open window in front of you with a fan blowing behind you
Do not breathe deeply, possibly wear a mask
Coughing and tearing are inevitable
Blend all ingredients in small batches. Stand away from blender lid when opening! Pour into glass container and refrigerate for at least 4 weeks.
Pour into small shaker bottles for serving
Note: May adjust amounts depending on your tastes.
