Ingredients
- 1 lb ground beef
- 2 cups chopped sweet yellow, red and/or green peppers
- 1 small onion, chopped
- 3 garlic cloves, minced
- 2 small potatoes, peeled and cut into 3/4 in. cubes
- 1 8 0z can tomato sauce
- 2 med tomatoes, chopped
- 2/3 cup chopped pitted green olives
- 1/2 cup sliced fresh mushrooms
- 1/3 cup dry red wine or beef broth
- 1 Tbsp louisiana-style hot sauce
- 1 Tbsp worcestershire sauce
- 1 1/2 tsp reduced-sodium soy sauce
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/4 tsp cajun seasoning
- cooked rice

Step 1
In Dutch oven, cook beef, peppers, onion and garlic over med heat until meat no longer pink;drain
Add potatoes, tomatoes, tomato sauce, olives, mushrooms, red wine and seasonings
Bring to boil
Reduce heat; simmer, uncovered 30-35 min or until potatoes tender
Serve with rice
