Ingredients

  • 1 lb ground beef
  • 2 cups chopped sweet yellow, red and/or green peppers
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 small potatoes, peeled and cut into 3/4 in. cubes
  • 1 8 0z can tomato sauce
  • 2 med tomatoes, chopped
  • 2/3 cup chopped pitted green olives
  • 1/2 cup sliced fresh mushrooms
  • 1/3 cup dry red wine or beef broth
  • 1 Tbsp louisiana-style hot sauce
  • 1 Tbsp worcestershire sauce
  • 1 1/2 tsp reduced-sodium soy sauce
  • 1 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp cajun seasoning
  • cooked rice

Preparation

Step 1

In Dutch oven, cook beef, peppers, onion and garlic over med heat until meat no longer pink;drain
Add potatoes, tomatoes, tomato sauce, olives, mushrooms, red wine and seasonings
Bring to boil
Reduce heat; simmer, uncovered 30-35 min or until potatoes tender

Serve with rice
