Pineapple Avocado Mango Salsa Recipe

Ingredients

  • 1 whole small avocado (or half a large), diced
  • 1 cup diced pineapple (or 8-ounce can pineapple tidbits, drained)
  • 1 cup diced mango (or 8-ounce can diced mangos, drained)
  • 10 cherry or grape tomatoes, quartered
  • 1/2 sweet onion, minced
  • 1 teaspoon minced garlic
  • Dash of your favorite hot sauce, or to taste
  • Salt and freshly-ground black pepper to taste
  • 1 Tablespoon white balsamic vinegar
  • Juice of 1/2 a lime (about 1/4 cup)
  • 1 Tablespoon of minced fresh cilantro (or 1 teaspoon dried cilantro)

Preparation

Step 1

Gently toss to combine all ingredients. Cover and chill. Serve as a condiment with chicken, fish, seafood, tacos or over a bed of lettuce as a salad.

Yield: about 4 cups
