Ingredients
- Meatballs:
- 2 # ground chuck
- 1/2 # ground pork
- 1 1/4 cups dry bread crumbs
- 1 1/4 cups milk
- 1 egg, slightly beaten
- 1/4 cup minced onions
- 2 tsp salt
- 1 tsp pepper
- 1 tsp ground allspice
- 1/2 tsp nutmeg
- Sauce:
- 2 Tbs margarine
- 1 Tbs flour
- 1-10 1/2 oz can beef consomme
- 1/2 cup heavy or whipping cream
- Kitchen bouquet as needed for color and thickening
- 1 bay leaf

Meatballs:
Soak crumbs in milk. Saute onions in 2 Tbs margarine. Combine all ingredients in bowl and mix well. Season more if necessary. Roll into small meatballs and fry in hot margarine and/or butter flavored crisco until llightly browned. Makes about 60-70 meatballs.
Sauce: (Good Housekeeping Cookbook-page 42)
In skillet over medium heat, melt margarine. Stir in flour until well blended and smooth. Gradually stir in undiluted consomme and 1/2 cup cream; heat to boiling, stirring constantly. Add kitchern bouquet if necessary. Add meatballs and bay leaf, simmer covered about 15 minutes or until meatballs are tender. Discard bay leaf.
Sauce makes enough to cover about 40 meatballs.
