Lean Beef Meatloaf Dinner

This lean meatloaf dinner with tomato sauce is a classic crowd pleaser. Special K cereal is used in place of bread crumbs, creating a wonderful texture.
Ingredients
- 2 cups Special K® Original Cereal
- 2 pounds lean ground beef
- 1 egg, slightly beaten
- 1 finely chopped onion
- 1 cup finely sliced celery
- 1 can stewed tomatoes, canned
- 8 tablespoon skim milk
- pinch salt
- pinch of black pepper

Preparation
Step 1
Preheat oven to 375°F.
In medium mixing bowl, combine Special K cereal, beef, egg, half the onion, half the celery, the juice from the stewed tomatoes, milk, salt, and pepper. Mix gently until combined. Pack lightly in ungreased 9x5x3-inch loaf pan.
Bake in preheated oven about 1 hour or until an instant-read thermometer inserted into the thickest park of the loaf registers 160°F. Let stand 5 minutes before turning out onto heated platter.
Sauté remaining onions, celery, and tomatoes in skillet till well combined. This will be the gravy/sauce for meatloaf.
