Chicken Pot Pie
- Main ingredients:
- 4 cups bite-sized pieces cooked chicken
- 1 can cream of chicken soup
- 1 can chicken broth
- 1/2 tsp tarragon
- 3 chopped potatoes
- 2 chopped carrots
- 1/4 cup chopped onion
- frozen corn, peas, or other vegetables (desired amt)
- Top crust:
- 1 1/2 cup flour
- 1 tsp baking powder
- 1 1/2 cup buttermilk
- 1 stick melted butter
Pre-heat oven to 350 degrees
Mix soup, broth, and tarragon in bowl, set aside.
Place cut up chicken in greased pan (I use two smaller glass dishes).
Sprinkle vegetables over chicken until pan is almost full.
Take bowl of soup mixture and pour over top.
In another bowl, mix flour, baking powder, buttermilk, and butter; spread evenly over vegetables.
Bake uncovered ~1 hour or until crust is golden brown.
