Speedy Coq au Vin

Ingredients

  • 1 Whole Chicken, cut into pieces OR 2 Cornish Hens
  • 8 small white Onions
  • 16 small button Mushrooms
  • 3/4 Cup Red Wine
  • 1 TBSP Parsley - minced
  • 2 tsp dried Thyme
  • 2/3 Cup Butter - melted
  • 2 dried Bay Leaves
  • Salt and Pepper to taste

Preparation

Step 1

Preheat oven to 375' Coat 13 x 9 roasting pan with cooking spray.
Rinse chicken and pat dry.
Arrange onions and mushrooms around chicken.
Pour wine over chicken and vegetables.
Sprinkle with parsley, thyme, salt & pepper.
Drizzle melted butter over chicken.
Tuck bay leaves into liquid near chicken.
Bake for 1 hour or until done.
