Not Quite Fried Green Tomato Salsa

Ingredients

  • 8 quarts green tomatoes, cored
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 2 large red onions
  • 1 t. coriander seeds
  • 3/4 T. ground cumin
  • 3/4 cup fresh lemon juice
  • 1 1/2 T. Kosher salt

Preparation

Step 1

Bake tomatoes at 400 degrees for 40 minutes. Blister tomatoes and peppers with a blowtorch (or just cook tomatoes and peppers on the grill). Chop coarsely all veggies in food processor or by hand. Add all ingredients into a large pot and bring to a boil. Place in sterilized jars and process for 11 minutes in boiling water bath.
