Ingredients
- 8 quarts green tomatoes, cored
- 1 red pepper
- 1 green pepper
- 1 yellow pepper
- 2 large red onions
- 1 t. coriander seeds
- 3/4 T. ground cumin
- 3/4 cup fresh lemon juice
- 1 1/2 T. Kosher salt

Preparation
Step 1
Bake tomatoes at 400 degrees for 40 minutes. Blister tomatoes and peppers with a blowtorch (or just cook tomatoes and peppers on the grill). Chop coarsely all veggies in food processor or by hand. Add all ingredients into a large pot and bring to a boil. Place in sterilized jars and process for 11 minutes in boiling water bath.
