Ingredients
- 3/4 c plus 2 T packed brown sugar
- 1/4 c chopped pecans
- 1/2 tsp cinnamon
- 1 c all-purpose flour
- 1 c whole-wheat pastry flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 c canola oil
- 2 large eggs
- 1 c natural applesauce
- 1 tsp vanilla
- 3/4 c lowfat buttermilk
- 1 Golden Delicious apple, peeled, cored, and cut into quarters

Step 1
Preheat oven to 400 degrees. In a small bowl, mix together 2 T of brown sugar, the pecans, and the cinnamon. In a medium bowl, whisk together the flours, baking soda, and salt. In a large bowl, whisk the remaining ¾ c sugar and oil until combined well. Add eggs 1 at a time, whisking well after each additional. Whisk in vanilla and applesauce. Whisk in flour mixture in 2 batches, alternating with buttermilk. Whisk just until combined. Gently stir in apple chunks. Pour batter into muffin pan and sprinkle pecan mixture. Tap pan on counter a few times to remove air bubbles. Bake for 20 minutes.
