Ingredients

  • 1/4 C cornstarch
  • 1/2 C sugar
  • 1/2 C Water
  • 3 (or more) C blueberries, rinsed and drained
  • 1 pkg. (13 1/2 oz.) graham cracker crumbs
  • 1 1/2 C melted Butter
  • 2 pkgs. (8 oz.) cream cheese
  • 1 1/2 C sugar
  • 2 t vanilla
  • 1 pkg. (9 oz.) Cool Whip, thawed

Preparation

Step 1

Combine cornstarch, sugar water and blueberries. Cook in microwave in large pyrex bowl. Stir after 4" then every 1 1/2-2" until thick and clear. Cool.

Combine cracker crumbs and butter and press 1/2 crumbs into bottom of 9 X 13" pan.

Mash cream cheese until soft gradually beating in sugar and vanilla. Fold in Cool Whip.

Spread 1/2 cheese mixture carefully on cracker base. Spread blueberry filing evenly over cheese then remaining cheese mixture over berries. Sprinkle w/remaining crumbs. Chill overnight and cut into squares.
